Corn and Feta Fritters

These are a tasty, budget friendly option for breakfast or lunch, serve with a salad or as shown in recipe

Prep time:
5 mins plus standing
Cook time:
10 - 15 minutes
Makes:
about 20



Ingredients
1 1⁄2 cups self-raising flour
3 eggs
1 tsp salt
freshly ground pepper
3⁄4 cup soda water
2 cups corn kernels
2 tbsp chopped mint
1⁄2 cup crumbled feta cheese

Instructions:
Mix flour, eggs, salt, pepper and soda water together until smooth. Stir in corn, mint and crumbled feta. Stand for 10 minutes. Cook spoonfuls in 1⁄2 cm hot oil in a pan over medium heat until golden on each side. Makes about 20.

Serve with sliced avocado and tomato chutney.

Pastry - Short Crust


This is a super easy pastry recipe, that always turns out really well. A  great way to turn left over beef stew (that the kids weren't so keen on) into to a meal that the whole family loves, as well as making the leftovers go further.

Ingredients
3/4 cup (110g) plain flour
75g cold butter
1 tablespoon finely grated parmesan cheese 
1/4 teaspoon sweet paprika
1 egg yolk
3-4 teaspoon iced water, approx

Method
In a food processor or thermomix, process the flour, butter, parmesan and paprika until it resembles large breadcrumbs.
Add the egg yolk, and while the motor is running, add enough iced water until the mixture just comes together.
Knead the pastry on a lightly floured surface until it is smooth. Wrap in clingfilm, and place it in the fridge for 30 minutes.
Roll and use as required, bake 180 C until golden.

Savvy Tip
# Don't have parmesan, works just as well with edam cheese.

Cocktail Meatballs with Chutney



This is one of those recipes that is sure to please, great to whip up if you are asked to bring a plate of nibbles or for a potluck dinner (just make the balls a bit bigger).  I made these and various other nibbles last Friday for a Midwinter Christmas function and they were everyone's favourite.


Ingredients

Meatballs
500 g topside mince
1/2 cup fresh breadcrumbs
1/4 cup milk
1/2 cup coconut
1 small onion (finely chopped)
1 egg
2 teaspoons Worcester sauce
1/2 teaspoon salt
1/8 teaspoon pepper

Chutney Sauce
1/2 cup tomato chutney or sauce
1/3 cup plum jam
2 tablespoons orange juice
2 teaspoons mustard
salt and pepper to taste

Method
Meatballs
Preheat oven to 180 C.
Mix all ingredients together.
Shape into little balls around (2.5cm)
Place on oven tray and bake in preheated oven for 20 to 25 minutes, turning once.

Chutney Sauce
Mix all ingredients in a large pot, heat to just boiling.
Turn to low and add meatballs, heat through.
Serve meatballs with toothpicks.


Savvy Tips

# when shaping meatballs use wet hands.

# make meatballs a couple of days ahead and keep in fridge or make and freeze until you need them.


# to reheat - use a slow cooker, add meatballs pour over sauce and heat for approx. 1 hour before serving.

Persimmon's

Savvy eating in Season

Persimmons are not something I used to use, but one of my daughters loves them and Dad has a tree. Here are some recipes you may like to try.

History: Persimmons are the fruit of deciduous trees that originated in China where there are more than 200 varieties. They have been grown in New Zealand since 1873.

Persimmon Facts: Persimmons can be eaten fresh or cooked.

Available: May to June

Storing: In the home, persimmons are unlike many fruit, as they keep longer if they are at room temperature. Room temperature is in the range of 15°C to 25°C. In warmer climates therefore, rooms with air conditioning are ideal to keep your persimmons in top condition. 
Persimmons kept in a fridge will go soft more quickly than if left at room temperature.

Spicy Persimmon Chutney
This recipe sounds great and it would be good to have a few jars in the store cupboard or to give away.



Ingredients
½ cup apple cider vinegar 
1 onion, chopped
1 Granny Smith apple, peeled, cored and chopped
3/4 cup sugar
1/4 cup lemon juice
1 red chili, seeded and sliced
1 tablespoon minced fresh ginger root
1 tablespoon lemon zest
1 teaspoon ground coriander seed
1/8 teaspoon ground cloves
4 persimmons, peeled and chopped

Method
In a large saucepan combine the vinegar, onion, apple, sugar, lemon juice, chili, ginger, lemon zest, coriander and cloves

Bring to a boil over medium heat, stirring occasionally. Reduce heat to medium-low and simmer until mixture thickens, stirring frequently, about 25 minutes
Add the persimmons and simmer until the persimmons are tender about 5 to 10 minutes
Remove from the heat and let cool completely
Spoon into jars


Persimmon Salad With Blue Cheese

Looking for something different in the salad line, try this recipe.


Preparation: 5 minutes


Ingredients
12 cups salad greens of your choice
2 persimmons, peeled and cut into chunks
100g blue cheese
Walnuts
Reduced balsamic vinegar

Method
On a large platter assemble the salad; greens, persimmons, blue cheese and walnuts
Drizzle with the balsamic vinegar


Sweet Persimmons with smooked Salmon Salad

Ingredients
2 sweet persimmons
250g (9oz) sliced smoked salmon
Assorted lettuce leaves

Dressing: 

2 tablespoons white wine vinegar
1/2 teaspoon prepared mustard
2 tablespoons olive oil


Method
Peel and thinly slice the persimmon.
Arrange in a fan shape on four serving plates.
Form smoked salmon in rosettes and add to plate with assorted lettuce leaves.

Whisk vinegar and mustard together then slowly add the oil.
Sprinkle over the salmon just before serving.

Serves 4 as a starter.

Sweet Persimmon Sundae


Ingredients
8 scoops vanilla ice cream or gelato
3 sweet NZ persimmons
1 tablespoon lemon juice
Sugar (optional)
Garnishes


Method
Prepare scoops of ice cream and place back in freezer until very solid.
Meanwhile peel two persimmon and cut in chunks.
Puree with lemon juice in food processor until smooth.
Sweeten to taste if desired.
Cut remaining persimmon into small dice.
Place ice cream in four serving dishes top with diced persimmon then the puree.

Garnish as required.
Serves 4.

Chickpea Casserole





So simple and so hearty, this Chickpea Casserole is the perfect winter comfort food. 

Its a healthy little casserole thats lick-the-bowl delicious, quick to prepare and easy on the budget. Packed full of flavour and a great way to get your daily intake of vegetables.
This is one of those dishes where you can literally use up what's in the fridge. 
It is so versatile, try different combinations of vegetables that are in season to truly nourish your body. I first stumbled across this recipe when dining at my good friend Sonia's house, she is one of the first people who influenced me and showed me that vegetarian food is delicious (it was a few years ago!). This version is as close to the original that I can recall, whenever I make this recipe I always think of her (and our hilarious attempts at playing tennis!). 



I love the way that (for me) food provokes memories and

  • Take 1 can of Chickpeas (drain) place these in the bottom of a casserole dish. 
  • Saute 1 onion and 1-2 cloves of garlic in approx 1 Tablespoon of Olive Oil.
  • Then take 1/2 of a 800g can of chopped tomatoes and layer over the chickpeas.
  • Next layer is the onions and garlic. 
  • Next layer 2 cups of other vegetables (I used red pepper, roasted pumpkin and spinach)
  • Then the other 1/2 of the canned tomatoes.
  • Make sure to add some fresh herbs in the layers 
  • (I used sage and basil) dried herbs is fine too.
  • Top with 1/2 cup of unsweetened greek yoghurt (you could use sour cream) mixed with 1 egg.
  • Sprinkle with crumbed feta cheese


Bake 170 degree celcius for approx 30 minutes or until brown on top and vegetable are cooked through.

Savoury Muffins



These muffins are super easy, very yummy and economical to make.  Also a great way to use up vegetables, both raw or cooked (dice up left over roast veges).  There is no butter or oil in this recipe - the cheese brings the richness.

Makes 10 -12  muffins

3 cups plain flour
6 teaspoons baking powder
3 pinches salt
3 pinches black pepper
2 cups grated tasty cheese (go for a mature cheese)
4 cups mixed roasted vegetables, with feta. spinach, mushrooms, or or frozen corn etc.
3 free-range eggs
1 1/2 cups  full fat milk
3/4 cups relish or chutney
Poppy seeds or sesame seeds for top



Ready to go into the oven
Pre-heat oven on fan bake 190°C. 
In a large mixing bowl sift flour and baking powder. Add salt, pepper and grated cheese mix through. Add chopped veges, feta, spinach and whatever else you want to put in the dry mixture.
Add eggs and milk then mix with a large spoon to combine, making sure all the flour at the bottom of the bowl is incorporated.
Set aside for five minutes as you grease your muffin tin.
Pile the mixture into the muffin tin, making sure there is an even amount in each space.
Top each with a generous teaspoon of your favourite relish or chutney and sprinkle with sesame seeds or poppy seeds.
Place muffin tray in the centre of your pre-heated oven and bake for 25 minutes or until a skewer comes out clean.
Leave in the tin for a few minutes before turning out and devour with lashings of butter.


Savvy Tips

The chutney or relish on top of the muffins is important.  If you don't have any use pesto or tomato sauce.

When making these muffins prepare the dry and wet mixes the night before. Just combine the next day when you are ready to make them.

Try adding chopped up parsley or thyme to the mix for added flavour.

Pizza in a Pan


This is quick and easy way to make a pizza

-Easy for the kids to make after school.
-Quick dinner or lunch
-Great way to use up leftovers
 
Put a few leftovers on Lebanese bread, and voila! Frying pan pizza! So easy to make.



On this pizza

Tomatoes in a can pureed together with a some pesto thrown in for the sauce. Grated cheese, roasted pumpkin, leftover chicken, mixed herbs. Serve with spinach leaves.


How
Spread the base with tomato sauce, sprinkle on cheese, place pumpkin, chicken on top. Sprinkle with Italian herbs. Carefully place in fry pan, put lid on (use a large pot lid if you don't have one for your fry pan) Cook on low until the base is crispy and cheese melted.

Butter Chicken - a Savvy makeover for a healthy family friendly dinner



The reason this recipe is titled "Family Style" is due to the fact it was developed for large busy families that can't just pop up to the local "Indian Takeaways" .

Its a simple recipe that we've based it around canned foods to keep preparation time minimal.
The goal was to create a recipe that was child friendly too, most children tend to love butter chicken. This version isn't authentic, but saying that it does satisfy and have that comforting appeal of the takeaway version.

MAMA'S "FAMILY STYLE" BUTTER CHICKEN
Serves 6


400g Chicken (boneless/skinless thighs or breasts)

A splash of Olive Oil
1 Onion finely diced
1 Clove of Garlic
1 tsp of Fresh Ginger

1 Can of Coconut Milk
1 Can of Chopped Tomatoes
1 Can of Chickpeas (optional)

1 teaspoon ground Cumin
1 teaspoon ground Coriander

1 teaspoon Chilli Powder (optional - leave out if feeding little ones)
1/2 teaspoon of Cinnamon

Chop Chicken into cubes and saute in a hot saucepan in alittle Olive oil until just browned - remove from pan and set aside.

Saute the onion in a splash of Olive oil on a medium heat until soft and clear.
Add in Garlic and Ginger and saute for 30 seconds.
Add in Cumin, Corriander and Chilli Powder (Optional) saute 20 seconds
Then add in the canned Tomatoes, Coconut Milk and Chickpeas and stir through.
Simmer gently for approx. 20 Minutes.

Serve over Brown Basmati Rice.


Savvy Tips

# Add the chicken into your pan in small batches, if you dump it all in at once you'll reduce the pan heat too quickly and your chicken won't brown and will overcook.

#  Stir through 1/2 cup of Unsweetened Greek Yoghurt prior to serving this adds a lovely creaminess and sprinkle with fresh coriander finely chopped.

# Add in sliced carrots or potatoes to the dish prior to simmering to boost the nutrition value of this meal (if your children are fussy grate in the vegetables).

# Grab out a bag of frozen green beans add them in and stir through 5 minutes prior to finishing cooking.

# Make it meat free, simply omit the chicken and add in lots of delicious veggies - Pumpkin works well, the chickpeas can will be the main protein source.

# Try stirring in a handful of baby spinach at the end of cooking also for a leafy green nutrition boost!

Easy Pizza Dough

Greek yogurt + self raising flour = pizza dough


Awhile ago I stumbled across this really simple pizza dough. I'm not sure exactly where I first saw it. But it did take me along time to try it, I'm glad I finally did. 

Its awesome - so simple and quick.

2 Ingredients

1 Cup Self-raising flour
1/2 Cup Unsweetened Greek Yoghurt

Mix to form a ball. Turn out onto a floured board and knead for approx. 5 mins.
Roll into pizza shape and top with your favourite pizza toppings.

It is so simple even the kids can do it. No waiting! Great for "cooking on the fly".
